One of the six basic tea families

White tea

Understand white tea processing and what to check on a packet before choosing a method.

By TeaPlain · Overview checked

What makes it white tea?

Withering and drying are central to white tea manufacture. The category is defined by processing, rather than by whether the finished drink looks white. It is not simply a green tea with a different name.

Names you may encounter include Baihao Yinzhen (Silver Needle), Bai Mudan (White Peony), Gongmei and Shoumei. The named product matters more than the broad category when you ask for directions.

Read the packet

Look for What to ask
Exact product name Which white tea is this?
Production information What date and origin does the producer state?
Loose or compressed form Are the directions for this exact form?
Storage information What conditions does this packet require?

Keep production date, storage history and any seller’s age claim distinct. An age description is not a replacement for information about the actual packet.

Before brewing or storing

Explore more named guides: Gongmei, Shoumei, Aged white tea, Zhenghe Silver Needle, Songxi Xiaobai, Moonlight White. These describe products, regions or storage histories rather than a universal quality ladder.

Start with the individual Baihao Yinzhen / Silver Needle guide or Bai Mudan / White Peony guide. Match the tea dose, actual water, temperature, vessel and timing to the method. Do not borrow the Longjing glass method merely because both teas can look pale.

Use the first-packet guide for a question you can send to the supplier. Follow the packet’s storage conditions; this overview does not prescribe home ageing or promise that an older tea is better.

Common question

Does “white” mean a caffeine-free herbal drink?

White tea is tea from Camellia sinensis. Check the actual product information if caffeine matters to you; the category name is not a caffeine-free claim. For drinks made from other plants, see herbal and fruit infusions.
